PB & J Waffle Ice cream sandwich

INGREDIENTS:

  1. 2.5 c Almond Milk
  2. 1.5 c wholewheat flour
  3. 1 tbsp flax meal
  4. 1 Medium Banana
  5. 2 tbsp vegetable oil
  6. 1 tsp baking powder
  7. 1/4 tsp pink Himalayan salt

Garnish

  1. Justin's Peanut Butter
  2. 2 tbsp strawberry jelly
  3. Sliced banana
  4. Coconut Vegan Ice cream (or favorite vegan ice cream of choice)
 

DIRECTIONS

1.   mash banana 

Mash 1 medium banana with a fork.

2.   whisk wet ingredients

Whisk together the banana, almond milk and vegetable oil.

3.   whisk dry ingredients

In a separate bowl, combine whole wheat flour, flax meal, baking powder, salt.

4.   Cook 1st Waffle

Pour 185 ml of the batter into your preheated waffle maker and cook for 4-5 minutes depending on your waffle maker's strength.

5.   Cook 2nd Waffle

Once the first waffle is done, start cooking another.

6.   Granish 1st Waffle

Top the first waffle with peanut butter, jelly and 1 sliced banana.

7.   Enjoy with Vegan Ice Cream
