Blackberry chia Jelly
# 15-minute vegan recipe
INGREDIENTS:
- 1 c blackberries
- 1/2 c raspberries
- 1/2 squeezed lemon
- 2 tbsp chia seeds
DIRECTIONS
1. simmer
Add the blackberries, raspberries and lemon juice to a sauce pan at medium heat. Simmer for 3-5 minutes. After the first 1 minute of letting it heat up, use a fork to mash the berries down and stir regularly.
2. chia time
Turn the heat off and stir in the chia seeds. Let cool.
3. Refrigerate
Refrigerate in a sealed glass jar. The jelly will last for up to two weeks... or smother it on my baked oatmeal cake recipe and finish it in 2 days... but maybe that's just me :)
